The FSL Assistant (Community Kitchen Chef) is responsible for the hands-on preparation of nutritious hot meals for the IDPs in camps. This role involves all aspects of meal production, including ingredient preparation, cooking, kitchen cleanliness, and meal distribution inside the camps. The Assistant ensures that all food is prepared in compliance with health and safety standards, in addition to meal preparation, the FSL Assistant ensures that meals are nutritious and culturally appropriate, contributing to the community's well-being and resilience during times of crisis.
Objective 1: Meal Preparation and Cooking
Prepare daily meals according to the established menu and recipes, ensuring adherence to health and safety protocol.
Wash, chop, and prepare ingredients such as vegetables and grains, often improvising with available resources.
Operate kitchen equipment safely and efficiently, adhering to standard cooking procedures.
Objective 2: Kitchen Hygiene and Safety
Maintain high standards of cleanliness and sanitation in the kitchen and food preparation areas.
Follow all food safety regulations to prevent contamination and ensure safe food handling practices.
Properly store food supplies to maintain freshness and prevent spoilage.
Contribute to reducing food waste by managing portion sizes and utilizing leftover ingredients creatively.
Objective 3: Meal Distribution
Assist in packaging and transporting prepared meals to designated distribution sites.
Participate in the orderly and respectful distribution of meals to beneficiaries.
Ensure accurate meal counts and manage portion control during distribution.
Objective 4: Stock Management
Monitor inventory levels of kitchen supplies and ingredients.
Report shortages or supply needs to the FSL Officer promptly.
Assist in receiving deliveries, checking the quality and quantity of supplies received.
Objective 5: Cleaning and Maintenance
Clean and sanitize all kitchen utensils, equipment, and surfaces after use.
Dispose of waste properly and manage recycling efforts where possible.
Conduct regular checks on kitchen equipment to ensure it is in good working condition.
Objective 6: Team Collaboration
Work closely with other kitchen staff and volunteers to ensure efficient kitchen operations.
Follow directions from the FSL Officer and contribute to team meetings when required.
Collaborate closely with the local community members to ensure the smooth operation of the kitchen.
Support new team members by sharing knowledge and best practices.
Objective 7: Feedback and Service Improvement
Engage with beneficiaries to gather informal feedback on meals.
Communicate any suggestions or observations to the FSL Officer for service improvement.
Participate in training sessions to enhance cooking skills and knowledge of nutritional practices.
Objective 8: Documentation and Reporting
Maintain daily logs of meals prepared, inventory updates, and any incidents.
Assist in compiling basic reports as requested by the FSL Officer.
Ensure all documentation is accurate and submitted in a timely manner.
High school diploma or equivalent.
Certification in culinary arts or food services is an advantage.
Proficiency in food preparation techniques and use of kitchen equipment.
Understanding of food safety and hygiene regulations.
Ability to follow recipes and adjust quantities as needed.
Basic record-keeping skills.
Experience in managing kitchen operations or food programs in crisis contexts and emergencies.
Minimum of one year of experience in cooking or kitchen operations.
Prior experience in large-scale meal preparation, preferably in humanitarian or community settings.
Ability to be resourceful and creative in meal preparation under challenging circumstances.
Fluency in reading, writing, and speaking Arabic and English.
Office 365, Intermediate Excel.
National, Gaza (Middle Area or South).
